In the realm of Baux de Provence the grape is the king

Each stone seems to tell its own story
and the shade beckons vou to stay.
Every tree invites you to relax and drift away in a pleasant dream.

Dalmeran wines have been planted on the slopes of two vallevs leading into the Alpilles hllls. The earliest record of vines and olive trees on the domain was in 1531. The roman road, via Domitia, passed by its front door on the northern slopes of the Alpilles.

Its micro-climate is constantly regenerated by the pulsating Mistral wind. The vines are planted in a clay/lime stone soil and the surface is peppered with pebbles. The vines, grenache, syrah, cabernet-sauvignon and cinsault were planted over 25 years ago.

The vines reign in this domain.
Cultivation techniques are traditional - no inorganic fertilisers, no herbicides, only a few organic compounds and constant working of the son and sub-soil.

Dalmeran White and Rose wines have been, officially, classes as organic since 2011.
The yields have been voluntary limited to under 3500 litres per hectare.

The harvest is carried out manually with rigorous selection of healthy grapes at the sorting table in the winery.

The winery is modern in conception; allowlnq separate vinification by grape variety.

The major attributes of the winery are:

  • Gravity feed for the grapes
  • Cold and warm maceration of the grape must
  • Mechanical pumping (remontage) and punching of the grape cap (pigeage)
  • Château wines are a" 100% bled (vin de saignée) for both the red and rosé wines
  • Château reds are stored separately, by grape variety, in oak barrels (foudres of 4000 or 5000 litres) for at least two years.
  • Bastide red wine is stored in demi-muid oak barrels for at least 12 months
  • Château rosé wines are raised on lees.
  • Château reds are blended and then stored in a temperature controlled warehouse for 4 years before being released for sale.

Wine takes time to mature and Dalmeran have decided to give their wine the time it needs to fully express its identity. It is no wonder with such attention to detail that Dalmeran wines are considered amongst the best in the Baux de Provence.
